Introduction
I have a personal story associated with this accord).
One day I was sitting in one of the cafes in Kyiv, where they serve great almond croissants. When the subtle aroma of almonds reached me, my memory following the Proust effect helpfully reminded me of an absolutely amazing dessert, with a sweet, airy vanilla-almond flavor, that I had a couple of years ago in another restaurant. I wanted to taste this dessert again. But it turned out that this restaurant had been closed since the beginning of the war. I was upset, but decided: I can’t feel the taste of this dessert, but I can recreate the smell! On the same evening, in my workshop, this fantasy gourmet vanilla-almond meringue accord was born, which I am happy to share with you, and with my students, at the BeLOVA perfumery school in Ukraine.
