Also known as caviar lime or citrus caviar, the finger lime (Citrus australasica) is a jewel of Australian native flora. This small, pod-like citrus is prized for its vibrant pearls of juice—technically called vesicles—that burst with flavor and aroma. Traditionally, these unique fruits were used not only in culinary creations but also in Indigenous medicine to treat minor wounds and skin irritations.
I had the pleasure of encountering these remarkable fruits at a local nursery, and their scent alone was enough to spark inspiration. Bright, zesty, and utterly refreshing—an accord had to be made.
The pearls can be enjoyed fresh or incorporated into dishes for a citrusy pop, while the peels can be dried and used as a fragrant spice. But what truly sets finger limes apart from conventional limes (Citrus aurantiifolia) is their complexity: a sharp bitterness, vibrant green edge, a touch of salinity, and even subtle mentholic or herbaceous nuances. Think of them as a dynamic fusion of lime, lemon, and grapefruit—elevated.
In crafting this accord, I focused on enhancing the multifaceted nature of the fruit. A foundation of bright citrus oils is lifted with green and aromatic notes, resulting in something vivid, refreshing, and wholly unique.
With the heavy use of natural citrus materials, we recommend only using a maximum amount at 4.7% in total formulation to remain compliant with safety guidelines.
